Spread with beans

With our red adzuki beans, you can whip up a delicious and hearty bread spread in no time!

Ingredients for 1 bowl of dip:

- 1 large, ripe avocado
- 200g mamma lucia Red Adzuki Beans, drained and rinsed with clear water
- 2 tbsp mamma lucia Olive Oil extra vergine
- a little fresh lemon juice
- salt, pepper
- a little garlic if desired

We used sourdough bread for the finished bread and topped the dip with fresh tomatoes and a few leaves of spinach.

Preparation:

Start by halving the avocado, removing the pit, and scooping the flesh out of the skin.

In a bowl, mash the avocado with a fork until smooth. Add the red adzuki beans and mash them slightly with the fork, mixing them into the avocado until you reach your desired texture.

Season with olive oil, salt, pepper, lemon juice, and optional garlic to taste.

Serve immediately and enjoy!
