Chickpea boats

Craving chickpea salad? This creamy version is perfect served in lettuce boats or as a tasty sandwich topping.

Ingredients:

- 1 tin of mamma lucia Chickpeas
- 1 small red onion
- approx. 100g maize kernels
- 1 spring onion
- 2 tbsp yoghurt
- 1 tbsp mayonnaise
- 2 tsp mamma lucia Olive Oil extra vergine
- 1 tsp mustard
- salt, pepper

Preparation:

Drain the chickpeas in a sieve, rinse them under cold water, and let them drain. Then transfer them to a bowl and roughly mash them with a fork. Peel and finely dice the onion, and slice the spring onion into thin strips.

Add the corn, yogurt, mayonnaise, mustard, onion, and spring onion to the mashed chickpeas and mix everything well. Season with salt, pepper, and more mustard if desired. Let the mixture chill in the fridge for about 30 minutes to allow the flavors to meld.
